Easy Peasy Homemade Pudding

I wish I could lay claim to this recipe, but it is yet another find. The only thing I usually change in any recipe is the white sugar. I just don't use it and so I'll substitute it with honey or sucanat (natural unprocessed sugar) or coconut sugar. Either way, use whatever it is you have.

Chocolate Pudding

1/2c. honey or choice sweetener
3T cocoa powder
1/4c. cornstarch or 2 1/2T arrowroot powder
1/8t. salt
2 3/4c. milk
2T butter
1t vanilla

Heat honey, cocoa powder, starch, salt, and milk over med heat. Bring to slow boil and stir constantly. When mixture coats the back of a spoon, remove from heat. Add in butter and vanilla stir and let cool. Serve warm or cold!
